Good Look Cookbook: Weeknight Pasta (an Ode to Shrimp Scampi)

Quick and easy. Simple but flavorful. This weeknight pasta, not only consists of things you probably already have in house, but also comes together entirely in about 20 minutes. The butter, garlic, and white wine sauce truly keeps this dish elevated and light, while still affording you the comfort of a pasta centric dinner. From date nights to late nights, this dish is a home run.


What you'll need:

  • 1 lb shrimp

  • 2 tablespoons butter

  • 2 tablespoons extra virgin olive oil

  • 1 teaspoon red pepper flake

  • Juice of half a lemon

  • 1 cup white wine

  • 1/2 cup vegetable broth

  • 1/4 cup chopped parsley

  • 4 garlic cloves minced

  • salt & pepper to taste

Instructions:

  • In a roomy skillet, melt your butter with your olive oil. Add in your garlic and saute until tender.

  • Once tender, add in your white wine and vegetable broth, salt & pepper, and red pepper flake. You want to let this reduce by close to half.

  • Add in your shrimp and gently cook, careful not to turn them into rubber here..

  • Once your shrimp have fully cooked, add in the juice of half a lemon, and your fresh parsley. If you're feeling generous, add on some grated parmesan.

  • Serve with pasta or crusty bread for dipping. Share if your nice, treat ya self if you're stingy.
