Good Look Cookbook: Tuscan Chicken

Let me tell you, between the "uncertain times" of the pandemic, the concept of work/life balance with a retail job, and my overall desire to be in the comfort of my own home; meals that I can crank out in 30 minutes or less are becoming a mantra to me. With a few key flavor components, you too can have something out on the table with a quickness- and more importantly, have the ability to put some time back into your evening to relax. Honestly, this sauce would be good over chicken or shrimp. Add in a bed of pasta or mashed potatoes (or even just a side of your fave veg) to really round it out. Either way, once you see how simple, quick and delicious this is, it's sure to be added to your list of favorites.


What you'll need:

  • 1 medium onion

  • 1 shallot

  • 1 lemon

  • 1 tablespoon of minced garlic

  • 1/2 cup of fresh or frozen spinach ( I lightly sauteed mine in a few seasonings of choice. An optional step, but worth it)

  • 1/4 cup of sun dried tomatoes. You do not have to drain these

  • 1/2 cup white wine

  • 2 cups heavy whipping cream

  • 1/2 cup of grated parmesan

  • 3 tsp of red pepper flake

  • salt & pepper to taste

  • Protein of choice (or not, the sauce itself would be great alone over pasta)


Instructions:

  • If you're opting for protein, prepare it. I personally seasoned and pan seared chicken in evoo, and placed them off to side to prepare the sauce.

  • After removing the chicken from the pan, add in your onion, garlic, and shallot to saute until tender- about two to three minutes.

  • Add in your white wine to deglaze the pan, once deglazed add in your heavy cream and sun dried tomatoes to simmer, stirring occasionally.

  • Once your sauce begins to thicken, add in your parmesan. Continue to stir and let reduce.

  • Once your sauce is close to your desired thickness, add in the juice from half a lemon, your spinach, and add your protein back into the pan. Sprinkle in your red pepper flake, and salt & pepper. Pair with your chosen side and this meal is complete.
